Mediterranean Cheeseball



16 ozs cream cheese softened

1 stick unsalted butter softened

2 ounces feta cheese, crumbled

1/2 cup kalamata olives chopped

1 lemon, zest only

3 cloves garlic minced or mashed

2 teaspoons Tuscan Sunset herbs or other Mediterranean herbs

2/3 cup chopped pine nuts toasted


In food processor, blend softened cream cheese, butter & feta until very smooth. Add olives, green onion, lemon zest, garlic & herbs & pulse until well-mixed.

Shape mixture into 2 balls, wrapped in plastic wrap. Chill until ready to assemble gifts.
Roll cheese balls in toasted pine nuts, wrap in festive plastic wrap.
Chill or freeze.

Bring to room temperature to serve with veggies or unsalted pita pieces or crackers.
