Mixed Veggie Casserole


1 cup mayonnaise

2 cups sharp cheddar cheese, shredded

1/2 cup instant minced onions

1 T lemon pepper

32-40 ounces frozen mixed vegetables, thawed (or 2 bags)

1 stick butter, melted

1 tube Ritz crackers, crushed


Combine mayonnaise, cheese, onions & pepper. Add veggies and mix. Pour into Pam-sprayed 9"x13" baking dish. Mix melted butter & crumbs, and spread over top of veggies. Bake at 350 degrees for about 45 minutes.
