Mock Apple Pie

1 unbaked pastry shell

1 stick butter melted

1 1/2 cups water

1 1/2 cups sugar

1 1/2 tsp cream of tartar

18 saltine crackers crumbled

2 tsp cinnamon

1 tablespoon fresh lemon juice


Combine melted butter, water, sugar, cream of tartar and crushed crackers in medium saucepan. Cook over medium heat until mixture begins to thicken. Add lemon juice and cinnamon to taste.
Pour into pastry shell & bake for 15 minutes at 425 degrees, and then 30 minutes at 325 degrees -- until thick.
