1 box (18 oz) spice cake mix
1/2 cup safflower oil
1/2 cup orange marmalade
1 large egg
1 teaspoon ground ginger
Solid shortening for greasing cookie sheet
Preheat oven to 350 degrees. Place rack in the center of the oven. Grease 2 cookie sheets with solid shortening.
Combine cake mix, oil, orange marmalade, egg and ginger in a large mixing bowl Blend with electric mixer on low speed for 1 minute. Stop and scrape bowl, and beat on low speed for 1 minute longer. The dough will be thick.
Drop teaspoons of dough 2" apart on prepared cookie sheets. Bake 12-15 minutes until light brown and feel firm when lightly pressed with your fingers. Cool for 1 minute before removing to a wire rack to cool completely, 20 minutes.
