Peanut Soup


1 sm onion finely chopped

2 ribs celery finely chopped

4 tbsps butter

2 tbsps flour

1 cup crunchy peanut butter

4 cups chicken broth (or beef broth)

2 tbsps lemon juice

salt to taste

Tobasco sauce to taste


Saute the onion and celery in butter till limp but not brown. Sprinkle with the flour and stir. Add the peanut butter, and stir to blend well. Add the broth, juice and seasonings. Heat thoroughly, stirring well.


Notes: A good warm-up after a cold football game!
Serving Ideas: Serve in mugs -- no spoon needed!
