Peasant Cabbage Tomato Soup


1 tablespoon olive oil

1 large onion, chopped

1 head cabbage, chopped

1 (15 oz) can diced tomatoes

4 cups chicken broth

1 tablespoon brown sugar

several generous splashes Tobasco

green beans or other veggies as desired


In a large pot or Dutch oven, heat the oil til shimmery on MEDIUM HIGH. Add the onion and stir to coat with oil. Cook, stirring frequently. Add the cabbage, stirring to coat. When the onion and cabbage are beginning to soften, add the tomatoes and broth. Add other veggies, if desired. Reduce heat to MEDIUM, cover and let cook for about 15 minutes or until cabbage is soft but still holds its structure. Stir in the tabasco and sugar.
