Pechuga Chicken


1/4 cup extra virgin olive oil

4 chicken breasts, boneless & skinless cut into cubes

7 ounce can whole green chiles cut in 1/2' strips

1 cup whipping cream

1 tablespoon fresh parsley minced

1 teaspoon black pepper

1/4 teaspoon salt

1/2 cup swiss cheese grated


Preheat oven to 325 degrees.
Brown chicken cubes lightly in EVOO. Put chicken in sprayed 9x13" baking dish. Arrange chile strips on top.
Whisk cream with seasonings and pour over chicken & chiles.
Sprinkle with Swiss cheese.
Bake 45 minutes.
Serve over rice or green Mexican style salad.
