Pink Peppercorn Marinated Berries


2 cups fresh blueberries

2 cups fresh raspberries

4 cups fresh strawberries, halved

1 tablespoon pink peppercorns, crushed

1 lime, zest only

1 lemon, zest only

1 orange, zest only

1 vanilla bean, scraped

2 cups vanilla simple syrup (see below)


For Vanilla Simple Syrup:
Combine 1 cup water & 1 cup sugar. Stir & cook with scraped seeds from vanilla bean and outside of bean, until sugar is dissolved. Remove bean pod when syrup is cool. (Or add vanilla extract to simple syrup)

Combine all ingredients and chill. Serve as a compote, or over pound cake, cheesecake or shortcake.
