Pita Chicken Salad


1 cup mayonnaise low fat

2 tbsps Dijon mustard

2 tbsps lemon juice

2 med garlic cloves minced

4 cups cooked chicken chopped

1 ounce 8 jar roasted red peppers chopped

1/2 cup green onions chopped

Creole seasoning to taste

butter or margarine soft

6 pita bread loaves halved

lettuce or sprouts optional


Combine all & mix well. Season to taste. Halve pita loaves & open pockets carefully. Spread insides with softened butter, & fill with chicken salad & lettuce or sprouts if desired.
Serve immediately or wrap tightly in saran or zip lok bags & refrigerate till serving time.


Notes: Make the salad (or whole sandwiches) a day ahead
