2/3 cup longhorn cheese, grated

4 ounces diced green chiles

4 ounces chopped green olives

4 green onions, finely chopped

8 ounces tomato sauce

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon oregano, crushed

6 English muffins, split

parmesan cheese, grated


Combine all but muffins & Parmesan in small saucepan. Simmer 10-15 minutes, stirring frequently. (Mixture may be frozen or refrigerated at this point.)

Lightly toast English muffins. Spread generously with mixture and sprinkle liberally with Parmesan. Bake at 400 for 5-7 minutes. May also broil till bubbly.

Serve whole or cut in wedges.
