1 lb boneless pork top loin
2 cloves garlic minced
1 teaspoon oregano
1 teaspoon cumin
2 tbsps orange juice
2 tbsps vinegar
1/2 teaspoon green Tobasco
1 tablespoon peanut or vegetable oil for frying
1 med onion sliced in strips
1 green pepper sliced in strips
For marinade, combine garlic, oregano, cumin, orange juice, vinegar and Tobasco and stir to mix. Slice pork across grain into thin strips. Marinate pork strips for 30 mins to one hour. Heat oil in heavy skillet until hot. Stir-fry pork, onion and green pepper until pork is done and veggies are done to your preference.
Serve with flour tortillas with shredded cheddar, shredded lettuce and salsa.
