Quarantine Tex-Mex Chicken & Rice


2 cups White or brown rice raw

2 cups cooked chicken, chopped

2 cups salsa (red or green)

1 15- oz can black beans drained & rinsed

1 tbsp chili powder or taco seasoning

1-11/2 cups Velveeta cheese cubed

3/4 cup cheddar cheese shredded


Quarantine recipe using just what I had on hand.


Cook 2 cups rice as directed, or use left-over or frozen rice.
Preheat oven to 350 degrees.
Spray a 2-quart casserole dish.

Combine all ingredients except cheddar cheese.
Pour into casserole dish, top with cheddar & cover.
Bake 25 minutes

To serve, top with combination of chopped red onion, tomatoes, avocados & cilantro tossed with a touch of olive oil.
