1 1/2 cups Monterey jack cheese shredded
1 cup cheddar cheese shredded
1 pie crust partially cooked
4 ozs green chiles chopped
8 ozs half and half
3 eggs slightly beaten
1/4 teaspoon salt
deep dish frozen pie crust
Sprinkle all of the jack cheese & half of the cheddar over bottom of partially baked crust. (I use "deep dish" frozen crust.) Sprinkle chiles over cheese. Beat eggs with half & half and salt, pour into crust. Sprinkle remaining cheddar over top.
Bake at 325 degrees for 40 minutes or till center of quiche is set. Insert knife in center to test.
Let stand 15 minutes before cutting. Serve warm or cold.
