Roasted Balsamic Sausage, Pepper & Onions



1 lb sweet Italian sausage preferably frozen

3 lg onions

2 lg green bell peppers

2 lg red bell peppers

4 small red potatoes optional

2/3 cup balsamic vinegar


Preheat oven to 425. In a 9 x 13 pan (or larger) combine sausage, casing removed & cut into one inch chunks, with onions, peppers, potatoes, balsamic vinegar and ground black pepper. Roast in oven until sausages are completely browned, onions nicely caramelized and liquid is almost completely evaporated, about 30 minutes. Stir, and add 1/4 cup water if pan seems to be drying out. Roast another 20-30 minutes.

Remove from oven & toss, scraping up brown bits and sauce. Pour into serving dish, or directly in hot, crusty rolls. Serves four.
