6 med sweet potatoes peeled & cut into cubes
1/3 cup maple syrup
3 T grainy Dijon mustard
2 T EVOO
1/2 tsp salt
1/2 tsp freshly grated black pepper
1/2 cup cranberries
Preheat oven to 400 degrees. Spray 9x13" baking dish with cooking spray.
In a large zipper bag combine syrup, mustard and oil. Add cubed potatoes & cranberries. Rub around to be sure all cubes are oiled. Pour into prepared dish. Sprinkle salt & pepper over all. Bake for 30-35 minutes.
