MARINADE:
1/4 cup oyster sauce
1/2 cup soy sauce
1/2 cup coconut milk
1/2 cup rice vinegar
SATAY SAUCE:
1 cup peanut butter
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
2 tablespoons honey
2 tablespoons lime juice
3 tablespoons water
3 tablespoons coconut milk
2 tablespoons soy sauce
Marinate chicken overnight. Bake at 350 for 45 minutes to 1 hour. Serve with dipping sauce on the side.
Serving Ideas: Skewer bite-size boneless chicken or pork to charcoal.
