2 lbs turkey sausage
2 cups New York white cheddar, grated
4 cups water
2 cups milk
2 cups quick grits
Butter 9x12” casserole
Brown and crumble 2 lbs. sausage.
Beat 6 eggs and set aside.
In heavy pan bring water to boil, & add milk.
Bring back to just boil and stir in grits. Stir occasionally for 5 minutes.
Add sausage, beaten eggs & cheese, stirring to combine as each is added.
Pour into casserole.
Bake 350 for 1 hour or till slightly brown and center is set.
Serve for breakfast plain or with salsa or creole sauce.
