Sausage and Red Pepper Quiche

1 cup cooked wild or brown rice

1 can cream of mushroom soup

1 1/2 cups cooked sausage or bacon, crumbled

1 onion diced

1 ½ cups shredded cheese

6 jumbo eggs beaten (or 7 large eggs)

2-3 handfuls fresh spinach

1/2 cup roasted red pepper jarred or homemade

Creole seasoning to taste


Preheat oven to 375 degrees.
Spray a large pie plate or quiche dish with Pam.

Pour mixture in sprayed dish & bake for 45 minutes to 1 hour, or until knife inserted in center comes out clean.
Let stand for about 10 minutes before slicing into 6 wedges.
