Sazerac

Ingredients

2 jiggers rye whiskey or bourbon

1 teaspoon simple Sugar Syrup

3 dashes Peychaud's bitters

1/2 jigger Herbsaint or Absinthe

lemon twist

ice

chilled old-fashioned glass

Directions

Start with a cocktail shaker with plenty of ice. Into this, put 2 jiggers of rye whiskey, 1 teaspoon simple syrup, & 3 dashes Peychaud's bitters.

Pour half-jigger Herbsaint or Absinthe into chilled old-fashioned glass. Swirl it around to coat the inside of the glass, and pour out the excess, leaving a tiny bit in the glass. (You want to taste the Herbsaint, but you don't want to dominate the drink.) Now shake the cocktail shaker until thoroughly iced down. Strain into the Old Fashioned glass. Twist the lemon peel over the drink, then rub it on the rim of the glass, and drop into the glass. Serve.
