Scrambled Eggs on English Muffins


16 eggs beaten

1/2 cup sour cream, divided

1 teaspoon freshly grated nutmeg

1 tablespoon fresh parsley minced

salt and pepper to taste

1/4 cup green onion chopped

8 ounce sliced fresh mushrooms

1/2 cup cooked bacon crumbled

2 cup grated sharp cheddar

toasted English muffin halves

Dijon or other spicy mustard


Beat eggs, & scramble with 1/4 cup sour cream, nutmeg, parsley, salt & pepper.
Layer in greased 9"x13" casserole:
scrambled eggs
1/4 cup sour cream
chopped green onion
sliced mushrooms
crumbled bacon
grated cheddar.

Cover & refrigerate overnight.
Heat in 300 degree oven for 30 minutes.
Spread toasted English muffin halves lightly with mustard, & top with hot egg mixture.
