Slow Roasted Roma Tomatoes


Roma tomatoes

Kosher salt

freshly ground black pepper

extra virgin olive oil


Wash and halve Roma tomatoes. Place, cut side up, on sprayed baking sheet that has low sides. Sprinkle with olive oil, salt and pepper. Bake for 6-8 hours at 200 degrees.

Serve as a side dish, tossed with pasta, spread on crusty bread, or as part of antipasto.
