12 large eggs more eggs if smaller
1-2 teaspoon Spike seasoning or any other seasoning
1 cup grated cheese
1 can whole kernel corn well drained
1 can black beans rinsed & drained
cooked bacon crumbles or cooked crumbled sausage chopped ham or Canadian bacon
2-3 green onions finely chopped
Preheat oven to 375 degrees.
Spray muffin tins (12+6) well with olive oil spray. Place meat in bottom of each & top with corn, beans, cheese & green onion.
Beat eggs together well with seasoning. Slowly pour egg mixture over each muffin cup, stirring slightly with a fork to ensure egg is mixed in with other ingredients. Sprinkle with smoked paprika.
Bake egg muffins for about 25-30 minutes, or until puffed and brown on top. Cool.
Refrigerate -- but do not freeze. Will keep refrigerated for more than a week.
To reheat, microwave for about 1 minute.
