Spaghetti Fritatta

Brunch, Luncheon, Pasta, Side Dishes



Garlic minced

black olives, chopped

green onions sliced


spaghetti, cold left over

3 eggs

grated cheese any kind


In a heavy skillet saute garlic, onions & black olives in EVOO. Add green onions & salsa. Cook down.

Add cold spaghetti, well drained, on top. Press down into skillet.

Combine eggs & most of the cheese and pour over spaghetti. Cook over medium heat until beginning to brown on the bottom.

Flip over on a plate, and back into the skillet until browned a bit on that side also.

Top with a bit more cheese.
Slide out onto a plate, cut into wedges & serve.
