Spinach & Bacon Crustless Quiche

12 large eggs beaten

2 cups light cream

1 cup half & half

20 ozs frozen spinach squeezed & dried

1 lb bacon cooked & crumbled

3 cups shredded Swiss cheese

salt & pepper to taste


Spray or grease a 9x13” baking dish.
Pre heat oven to 325◦
Combine eggs, cream & seasonings in a blender or food processor.
Layer spinach, bacon crumbles and cheese in baking dish.
Ladle the “custard” over all.
Bake for 45 to 60 minutes till set and golden.
