Stuffed Pepper Soup

2 cups cooked rice


1 large onion chopped fairly small

1 tablespoon Italian Herb Blend

2 large green bell peppers chopped

8 ounces brown Crimini mushrooms halved or quartered

1 lb. hot turkey Italian sausage

1 lb. lean ground beef

2 (15 oz) cans crushed tomatoes

2 cans water

5 cups beef stock

1 tablespoon Worcestershire sauce

1/2 cup ketchup

salt and fresh-ground black pepper to taste

freshly-grated Parmesan cheese for serving


Brown beef & sausage. Drain on paper towels.
Add peppers, onion & mushrooms & saute.
Add crushed tomatoes, water, beef broth, Worcestershire, and ketchup. Simmer in crockpot several hours.
Add rice just before serving. Season to taste with salt and fresh-ground black pepper and serve hot, with freshly grated Parmesan cheese to add at the table if desired.
