2 1/2 cups mashed sweet potatoes
1/2 teaspoon salt
2 tablespoons melted butter
1 cup chopped nuts
1/3 cup honey
10 slices pineapple
Combine potatoes, salt, pepper & 2 T. melted butter. Chill mixture.
Using about 1/4 cup for each, shape into balls.
Heat honey with 1 tablespoon butter. When warmed, roll each ball in glaze & then in chopped nuts.
Place each ball on a slice of pineapple in greased, shallow baking dish. (Can be refrigerated at this point & baked later.)
Bake at 350 for 20-30 minutes.
