Texas Caviar


2 cans black-eyed peas with jalapenos, drained

1 can Rotel Tomatoes with juice

1 bell pepper, chopped

3 ripe Hass avocados, diced

1/2 large red onion, chopped

juice from 1 lemon

1/8-1/4 cup Italian dressing or red wine vinegar & EVOO

salt and pepper to taste

garlic powder

2 tablespoon fresh cilantro, finely chopped


Combine all and refrigerate several hours before serving.
