Texas Yellow Squash Casserole

6 cups diced yellow squash

2 tbsp evoo

1 lg onion diced

4 tbsp butter

1 10-0z can Rotel Tomatoes drained

1/2 cup sour cream

1/2 tsp garlic powder

1 tsp chile powder

1 tsp cumin

1 tsp salt

crushed tortilla chips

1 cup shredded sharp cheddar

1 cup Ritz crackers crushed


Preheat oven to 350 degrees.
Sauté squash in oil over medium heat until it has softened, about 20 minutes. Remove from heat & drain in a colander. Set aside.
Sauté onion in butter for 5 minutes. Mix in squash & all other ingredients.
Crumble a layer of tortilla chips in the bottom of a Pam-sprayed casserole dish. Pour squash mixture over tortilla chips.
Top with crushed Ritz crackers.
Bake uncovered for 30 minutes.
