Turkey Picadillo


4 tbsps olive oil

2 med onions finely chopped

6 cloves garlic minced

4 red and green bell peppers finely chopped

4 lbs ground turkey

2 1/2 tsps cumin

1 tablespoon oregano

2 tsps tarragon

1 teaspoon coriander

2 cups dry white wine

10 ozs Rotel Tomatoes or diced tomatoes

1/4 cup raisins

1 cup olives pimento stuffed

1 can black beans

poached or fried eggs sunny side up


Heat oil over medium heat. Add onions & garlic & cook without browning, 4 minutes. Add peppers & continue to cook about 10 minutes. Turn heat to high, add turkey, cumin, oregano, coriander and bay leaves. Break meat up into small pieces and cook till opaque, about 7 minutes. Add wine & cook till liquid is absorbed, about 15 minutes. Reduce heat to medium low and add tomatoes. Stir & simmer till liquid is absorbed. Stir in raisins & olives & cook 5-10 minutes longer.
Serve on rice with black beans on the side. Top each serving with an egg.
