Tuscan Panzanella


4 slices Italian bread or other bread

Olive oil spray or garlic butter spread

1 cup fresh basil leaves torn or snipped

1/2 cup red onion thinly sliced

2 lbs ripe tomatoes cored & cut into 1" pieces

1/2 cup kalamata olives pitted & halved

16 ozcan great northern beans rinsed and drained

3 tbsps red wine vinegar

1 tablespoon extra virgin olive oil

1 teaspoon bottled minced garlic

1/2 teaspoon freshly ground black pepper

1/4 teaspoon salt


Preheat oven to 350. Arrange bread in single layer on baking sheet. Spray with olive oil or spread lightly with garlic spread. Bake for 15 minutes or until toasted. Break into bite sized pieces.

Combine all other ingredients in a large bowl, and toss to mix. Add bread and toss. Serve immediately.


Serving Ideas: Serve with grilled eggplant slices.
