Tuscan Summer Salad


2 cups Italian or French Bread cubes cut 1"

1 lg ripe tomatoes peeled and cubed

1 sm cucumber peeled and cubed

1/2 cup onion or green onion finely cut

2 tbsps capers

1 (4-oz) pitted black olives sliced


1 clove garlic finely minced

1/3 cup good olive oil

1/4 cup red wine vinegar

1 teaspoon oregano

1 salt

1/2 teaspoon pepper

1/4 teaspoon tobasco


Combine bread cubes & veggies in serving bowl. Combine all dressing ingredients & whisk together. Pour half of dressing over mixture & toss all together. Add remaining dressing, tossing to mix well. Allow to stand 15 minutes; toss again & serve.


Notes: A wonderful summer salad!
Serving Ideas: May add freshly grated Parmesan cheese.
