Vidalia Onion Tarte


1 8" unbaked frozen pie shell

4 cups Vidalia onions thinly sliced

2 ounces extra virgin olive oil

2 cups Gruyere cheese grated

2 1/2 cups tomatoes diced & drained

10 leaves Basil cut in thin strips

salt & ground black pepper to taste


Preheat oven to 350 degrees.
Saute onion in 1 oz. olive oil over medium heat for 15-20 minutes or till golden brown. Season with salt & pepper & let cool.
Season tomatoes with salt, pepper & 1 oz. olive oil.
Spread onions over the pie shell. Cover with the cheese. Spread tomatoes over cheese, covering cheese completely.
Bake at 350 for 35-45 minutes, until crust is golden brown.
Sprinkle basil over tarte. Serve warm.


Serving Ideas: Good with fresh asparagus.
