Vietnamese Chicken Salad

2 cups cooked chicken shredded

3-4 cup napa cabbage shredded

4 green onions thinly sliced

1 cup matchstick carrots

1 red bell pepper sliced

1/2 cup fresh mint roughly chopped

1/2 cup fresh cilantro roughly chopped

1/2 cup chopped peanuts


1/4 cup fresh lime juice (about 3 limes)

2 tsps Sriracha sauce

3 cloves garlic minced

2 Tbsp sugar

3 Tbsp fish sauce

3 Tbsp vegetable oil


Dressing:: Combine all dressing ingredients in a small jar. Shake until thoroughly combined and sugar has dissolved.

Salad:: In a large salad bowl combine all the ingredients except for the peanuts. Toss gently & chill until serving time.

To serve, toss with the dressing and garnish with the peanuts.

Serve with lime wedges on the side.
