Wild Rice Medley


3 cups chicken stock

1/2 cup wild rice

1/2 cup long-grain rice

1/2 cup kashi

1 cup pine nuts toasted

1 cup dried apricots chopped

1/2 cup golden raisins

1 cup celery finely chopped

1 box sliced mushrooms


Combine stock, both rices and Kashi in saucepan. Cover and bring to boil over high heat. Reduce heat & simmer till rice is just cooked through, for 20-30 minutes. Strain any remaining liquid. Add remaining ingredients to cooked rice, mix well and serve.
