DRESSING:
1 teaspoon Maggi seasoning
1/4 teaspoon Tobasco
2 tbsps Dijon mustard
3 tbsps white wine vinegar
1/2 cup extra virgin olive oil
2 tbsps fresh parsley chopped
1/4 cup parmesan cheese grated
2 tbsps capers drained
SALAD:
1/2 cup green onion chopped
1/2 cup leeks chopped
1/2 cup red cabbage thinly sliced
1/2 cup cauliflower thinly sliced
3 cups assorted greens
Whisk all dressing ingredients together in small bowl. Combine onions, leeks, cabbage and cauliflower. Pour dressing over veggies and stir to coat all well. Marinate at least 30 minutes.
Line a clear salad bowl with the lettuces. Mound the marinated veggies in the center and serve.
