1 tablespoon butter melted

1 1/2 tbsps cornstarch

1/2 teaspoon paprika

1/2 teaspoon dry mustard

1 cup beer room temperature

1 lb monterey jack cheese grated


Combine butter, cornstarch and paprika and stir in fondue pot till smooth. Add beer; cook over low heat, stirring constantly until thickened. Add cheese, stirring in figure 8 & touching bottom of pot, until melted.
Serve with dry French bread slim baguette cubes and apple chunks.


Notes: Christmas Eve Tradition
Serving Ideas: Add 4 oz green chiles, dip with sausages for brunch.
