Zucchini Tomato Casserole (or Crab)

1/4 cup EVOO

1 large onion chopped

4 medium zucchini halved & sliced

3 cloves garlic minced

4 large tomatoes, peeled & cut in pieces

1 lb. crab meat or shrimp (optional)

2 cups swiss cheese, shredded

8 ounces fresh mozzarella cheese diced

1 box Italian flavored croutons crushed a bit

1 teaspoon Kosher salt

1 teaspoon pepper

1 tablespoon dried basil crushed

freshly grated Parmesan cheese


Saute onions, zucchini & garlic in EVOO. In a large bowl, combine with all remaining ingredients except Parmesan. Pour into Pam-sprayed 9"x13" baking dish, and sprinkle with freshly grated Parmesan cheese. Bake at 375 degrees for 30-45 minutes.
