PreHeat smoker to 375. Let it come up to temperature for about 45 minutes.
Sprinkle Semolina flour on the pizza peel.
Spread about half a jar of Rao's sauce on each pizza crust.
Sprinkle cheese over the pizza.
Layer on pepperonis.
Cook for 5 to 6 minutes. (5.5 minutes is about perfect)
Put the pizza on a large cutting board. Allow it to rest several minutes.
Slice pizza into eighths and enjoy!
