Homemade Cauliflower Pizza

Equipment

  • 1 RecTeq RT-700 Bull Pellet Smoker
  • 1 GMG Wood-Fired Pizza Attachment
  • 1 Pizza Peel
  • 1 Pizza Cutter

Ingredients
  

  • 2 Calipower Pizza Crusts
  • 1 jar Rao's Pizza Sauce
  • 1 cup Shredded Mozzarella Cheese
  • 1 pkg Pepperonis
  • 1 Red Peppers
  • 1 Parmesan Cheese
  • 1 Semolina flour

Instructions
 

  • Install Pizza Oven on the smoker.
  • PreHeat smoker to 375. Let it come up to temperature for about 45 minutes.
  • Sprinkle Semolina flour on the pizza peel.
  • Spread about half a jar of Rao's sauce on each pizza crust.
  • Sprinkle cheese over the pizza.
  • Layer on pepperonis.
  • Cook for 5 to 6 minutes. (5.5 minutes is about perfect)
  • Put the pizza on a large cutting board. Allow it to rest several minutes.
  • Slice pizza into eighths and enjoy!

We love to eat homemade pizza, and it tastes best cooked on a VERY hot pizza stone on our wood pellet smoker! Because we prefer lower carbohydrate meals, we favor cauliflower pizza crust, and have found that “Caulipower” crusts are the best. We can get those at Walmart for about $8 for two. Rao’s Pizza Sauce costs more that many alternatives, but is absolutely amazing. In the attached video, I just use red sauce, mozzarella cheese, and pepperonis, but I also like to make homemade pizzas with cooked Italian sausage and chopped sweet peppers.
