My first time to cook homemade fried chicken tonight, and it was a success!
I started by rubbing chicken quarters in light olive oil. Mixed four parts flour to one part corn starch, using a cup of flour and a quarter cup of cornstarch. Added a seasoning comprised of
- a teaspoon of garlic powder
- a teaspoon of dry mustard, a teaspoon of paprika
- a teaspoon of celery seed
- a teaspoon of cayenne pepper
- a full tablespoon of AP seasoning, which is mainly salt and pepper.
Coated each piece in a Ziploc bag. Let the pieces sit out in the kitchen about an hour before Cooke to come up to room temperature and hopefully let the batter adhere better.
Broke out our funnel cake turkey fryer and cooking pot with canola oil. Heated the oil up to 400°, put all 4 chicken quarters in and let the temperature settle to just over 350°. Maintained that oil temperature for the entire cook, about 15 minutes. Delicious!
Definitely gonna try this again, will try to experiment a little bit more with additional seasonings. I’d sure love to make this taste like Eishen’s Chicken back in Okarche, Oklahoma!
All four of these chicken quarters just cost $5 (total) at Harris Teeter grocery today. Definitely a great value.
